There is no problem provided you get what you are looking for.
Are you ready to be a 100% Muslim and 0% Hindu? There cannot be an Islamic Nikaah without conversion.
Are you okay if your parents disown you and cannot go to their home? In case if you get talaak, where will you go?

Bottomline, if you are ready to be 100% Muslim and 0% Hindu, there is no problem.
If you are not too sure about Islam, but 100% sure for this guy, just get married by the Special Marriage Act 1954. This way, you will have some time to think about Islam. You primary interest is your love, not Islam. If he truly loves you, he will surely agree to you, why not? Let us know what he says. Best wishes.

Mona, the problem will only come if the guy you are talking about is a conservative, religious and stereotypical Muslim from India or Pakistan. Such a guy would not marry a Hindu girl in most cases.
I know a few Muslim-Hindu and Muslim-Christian couples who are happily married and living in communal harmony in India (not just abroad) and their parents have also accepted this without enforcing their religion or culture on the other spouse. It will depend on where the Muslim partner is coming from, his education level and tolerance level most importantly.
